Green Papaya Salad

Without a doubt one of my favourite dishes EVER!!! ๐Ÿ™Œ This thai green papaya salad is spicy, sour, crunchy and everything yummy!

Although most fruits are no-nos on a low carb lifestyle, there are a few that can be enjoyed in moderation. Green papaya is one of them and this amazing salad is a great way to enjoy it.

Ingredients

1 medium green papaya
1 cup cilantro, chopped
1/2 cup peanut, toasted and chopped
2 limes, zested and juiced
1 scallion, chopped
2 garlic cloves, minced
1 Birdโ€™s eye chili
2 Tbsp Swerve brown
1 Tbsp fish sauce
2 tsp kosher salt

Directions

Peel and seed the green papaya, then grate or julienne the flesh. One medium fruit should yield about 6 cups.

Squeeze out any excess liquid and place the green papaya in a large bowl.

In a small bowl, whisk together the lime juice and zest, Swerve brown and salt.

To the large bowl with the green papaya, add the garlic, cilantro, scallion, Birdโ€™s eye chili and peanuts.

Drizzle with the lime juice mixture and toss well.

Optionally, garnish with some chopped peanuts and fresh cilantro.

Enjoy as-is or top with some grilled chicken or other meat for added protein.
